Biryani

Biryani, the centrepiece of countless holidays and weddings – where it regularly upstages the cake – is at the centre of a contentious cultural firestorm. It is a luxurious staple one would have in their wedding especially within the Malay and Indian community in Singapore.

Zareen’s Kitchen is a Halal Muslim Owned vendor specialising in Mutton and Chicken Dum Biryani. What we love about the dum biryani? It’s aromatic, mouth watering and authentic served with succulent chicken or mutton in layers of fluffy fragrant rice coming with the immersed spices and fried onions!

Preparing and cooking Dum biryani is indeed a laborious process where it is prepared with layers of fluffy basmati rice, marinated meat or chicken, browned onions, cilantro, mint, yogurt, saffron, ghee and spices.

And how do you know if it’s a good biryani? The rice itself should be fluffy and separated where they almost scatter like pearls – exactly how Zareen’s Kitchen biryani is!

The biryani is also accompanied by its condiments like Dalcha an Indian lentil-based curry and achar, an Indian pickle made from a variety of vegetables and fruits, preserved in brine, vinegar, and edible oils along with various Indian spices! What you get is an explosion of flavours and texture.

The Nasi Lemak Sambal Udang is also the latest addition on the menu at Zareen’s Kitchen. Again, basmati rice is used where the Nasi Lemak in this one is light and not too rich and creamy. Served warm, it’s a wonderful spectacle and experience sitting before the coconut-infused rice infused with the vanilla-like aroma of pandan leaves and citrusy ginger accompanied by an egg omelette, crispy fried anchovies and peanuts, a few slices of cucumber. Ah, these are indeed wonderful flavours to have on one’s palate. This experience is further amplified when you accompany the Nasi Lemak with it’s Sambal Udang! A fiery and piquant side dish often served alongside the Nasi Lemak, it is compulsory to have the Nasi Lemak with these Tiger Prawn sambal!
