Kelantanese Laksa

Laksamekni is a Halal Home Based vendor specialising in Authentic Malaysian cuisine like Laksa Kelantan, Laksa Penang, Nasi Dagang, Gulai Ikan and Gulai Ayam.

Generally, Laksa consists of thick wheat noodles or rice vermicelli with chicken, prawn or fish, served in spicy soup based on either rich and spicy curry coconut milk or on sour asam.

Laksa Kelantan derives from Kelantan, the northeastern part of Malaysia. It has a mackerel base of ikan kembung, thick coconut milk, stalks lemongrass, shallots, cloves garlic, slices dried tamarind, palm sugar, and salt. The soup gravy is usually whitish-greyish colour. Why we love it? The coconut milk and fish-based laksa taste of sweet and creamy is simply refreshing!

Laksa Penang Asam laksa is a sour, fish and tamarind-based soup. It is made with mackerel (ikan kembung) soup and its main distinguishing feature is the asam or tamarind which gives the soup a sour taste. The fish is poached and then flaked. Other ingredients that give Penang laksa its distinctive flavour include lemongrass, galangal (lengkuas) and chilli. Typical garnishes include mint, pineapple slices, thinly sliced onion, petis udang. Why we love it? Spicy and slightly sour with a tinge of tanginess!

Laksamekni originated from a mother-daughter duo from Kelantan where the two would serve their extended family Laksa Kelantan and Laksa Penang on every Hari Raya house gathering. It was something all of their extended families look forward to, because it was a “once a year” opportunity for them to dig into a luxurious Kelantanese food fare.

On one occasion where the founders tried serving a different menu, their families asked for laksa instead. Truth be told, the founders reverted back to the laksa menu and has been serving laksa throughout the 10 years ever since.

When COVID-19 came, the camaraderie and family laksa gatherings came to a halt. Needless to say, the extended families became sad over the loss of their laksa opportunity so much so they joked to have the laksa delivered instead.

“And that’s what we did!

“We cooked a lot of laksa, packed and delivered all the laksa to my extended families with the help of my cousins.

“That day, we delivered to over 20 homes!”

Moving forward, the founders decided to officially launch Laksamekni as a home-based business.

“We wanted to share our original Kelantanese laksa to fellow Singaporeans!

“More importantly too, we wanted to cater to those Kelantanese who are stuck and missing their homecooked Kelantanese dishes. “I’m very sure they miss their hometown food! So one of our goal is to be able to cure their longing of eating food from Kelantan.”
